Restaurant Grease Traps
Our experience with restaurant grease traps goes back to our first installation of ABGs at renowned chef David Beier’s picturesque Walloon Lake Inn. Not only did this installation recover David’s failed leach bed, it has eliminated almost 5 years of grease trap pumping.
Our most recent success has been with the combined septic and grease trap at Lombardi’s Delicatessen in Petaluma, CA.
This deli does one of the largest Bar-B-Que businesses in northern California. The growth of the business snuck up on them and soon they failed their leachfield. After adding a new leachfield, the county found that discharges were as high as 6,000 mg-l BOD and 1,500 mg-l fats and oils. Their second leachfield was filling up and the county ordered them to mitigate the problem. One S -86 SludgeHammer, along with some clever recirculation and supplementary air, allowed the leachfield to recover in less than a month. All monitoring wells have remained dry for a year. Not only that, pumping has not yet been necessary and the latest sampling in January 2006 showed BOD of 56, TSS of 27 and FOG non detectable at less than 5 mg-l

Winery Treatment
It was probably inevitable that SludgeHammer inventor Dan Wickham, having been a winemaker at his Sea Ridge Winery from 1979-1994, would get back into the wine
industry, but somewhat ironic that he finds himself at the waste end of the business. SludgeHammer Group, Ltd., joined forces with MicroMedia Filtration at the Cartlidge and Brown Winery in Napa Valley where they created a hybrid system using MMF’s CleanStream™ dynamic sand filter along with SludgeHammer microbiology to take a wastewater with a strength of over 3,000 mg-l BOD down to better than tertiary level (less than 10-10 mg-l BOD-TSS). Cartlidge & Brown will be able to discharge most of their wastewater with a subsurface drip system, thereby reducing some spectacular sewer charges. The SludgeHammer-CleanStream combo is being investigated for several large food processing operations in the south and looks to be a significant new advance in large scale wastewater treatment.
